I've had ponce my whole life though, and never seen it served with mashed potatoes, only rice and gravy. It's good with corn bread, mustard or collard greens and black eye or purple hull peas.

By far, my favorite Cajun meal.

Followed thisclose by smothered tasso and sausage. BTW never had it with mashed potatoes either. Always rice and maybe a slice or 12 of some pickled mirliton

Love it. Had Ponce once. It fricking sucked. Possibly the drunk coonass who cooked it didn't know what he was doing. Possibly he had a tainted Ponce. All I know is it stunk up the joint and was repulsive. And I will go to my death bed with that opinion until proven otherwise.

You probably had what we call "chaudin" which is green or unsmoked.

There's a big difference. My grandfather loved it but like chitterlings, it has to be very clean or it will smell like death. If you had a good smoked ponce, you might prefer that one.

Yea, this thing was green and not smoked. He called it a Ponce though. Or a "pawnze". I can eat most anything and get down with all kinds of coonass fare. This was bad

It was several years ago at a hunting camp around here. Guy was from Opelousas I think. Maybe Carencro. Somewhere around there. I think we have this discussion every time Ponce rears its ugly head on here. I throw a few 's. You defend it vigorously.

I cook smoked ponce several times per year and buy it from LeJuene's in Eunice
