Our Thanksgiving (Sun)Day

It's a beautiful morning today! Still early but the turkey is almost done already. Did a dry-brine method and put it on for our much loved overnight slow roast at about 11:30 pm last night(almost a 23 lb bird). After a few checks and butter bastes it's looking fantastic with nice crisp skin.
Getting ready to mix up bread dough for rolls and make a gravy.

Like I mentioned the other day we are having our Thanksgiving Day celebration today because my daughter was in the hospital delivering our second beautiful baby granddaughter. Can't be more thankful than that!


Got some Bloody Marys flowing about 10:30and on my second right now.



Our Thanksgiving Day has the Saints playing today. Pretty cool!

Alright, so I ate a lot yesterday then watched some football and great win by the Saints by the way and dozed off. I woke up and was still stuffed and didn't have the energy to post anything after cleaning up the kitchen. I did indulge in some desserts later in the evening. Had homemade pumpkin pie, apple pie and a toffee pecan pie I made.

We really cut back on the amount we usually cook but still had.......

Mac & cheese



Shrimp Mirliton dressing



Cornbread Dressing



Candied yams(these were still cooking when I snapped this picture)



Homemade rolls..... here they are almost ready for the oven but when I removed the plastic wrap they deflated a little bit)



These were really good!



Here's the turkey as it was going into the oven(it was dry brined, injected and seasoned)



Done!



Some of the carved turkey.....



Bird came out pretty darn delicious. Got many compliments.
Of course there was other stuff like petit peas, homemade cranberry sauce, mashed potatoes and heck, I know I'm missing something. It was a great meal that we couldn't have not had. Oh, there was also cake and champagne.

Oh, the carcass went in a stock pot for a couple of hours of a low simmer for a stock to make a gumbo at a later date.
