Okra - Growing / Cooking

Okra did well last year in my garden so I planted more this year. Plants got huge and I gave most if it away except some I saved for gumbo.

Q1 Why do people cut the lower leaves off as the plant grows taller?

Q2 What are some good ways to cook it, other than gumbo and frying (not much into frying)?

Never heard of that. It's the hardiest veg I've ever grown. You plant it, leave it alone and it grows until you kill it.

If you don't like fried go with it in gumbo.

I skewer it, rub with a little olive oil, salt and pepper and grill it. Haven't fried it since.

Have any of you tried the "vacuum fried" okra chips at Fresh Market? Talk about good! Oh, they call 'em chips, but they're actually whole pods.

When the okra pods get huge...use them for seeds...you need to pick them small to med. for eating...they freeze well.

Take some young okra, add to a small pot of boiling water. Boil for just a few minutes till tender but still crisp.
drain most of the water. Drizzle a little vinegar, salt and pepper and a pat of butter.

I've done it because I've seen it done. I think it's to focus all of the plants energy into producing the pods.
