Not so fast. We're talking steaks here, Otis, and there are rules for you, always. You're...well...you're "different".

I think the steaks at Ruth's are good pieces of meat, prepared very well and I LOVE that popping butter that comes with it on the plate. It would taste fine without it, but that butter on a buttery piece of steak is delectable to me.

I like my steaks with no sauce, typically. But caramelized onions and a good blue cheese sauce are damn tasty.

Steaks are good, sauce is good, steaks are good without sauce, steaks are good with sauce, sauce is good with a lot of shite.....

shite, I like cheese, I like burgers, every now and then I like em together. It doesn't mean the bread sucks, the meat sucks, or the cheese sucks.

I like to take some of the drippings, reduce with some red wine, add a little butter and some rosemary. Or I like a little balsamic reduction just plain.

It's not like it will be the last steak you ever eat. So, if you want to make a sauce for it just go right ahead. Sometimes I like a Madeira sauce with mushrooms.

I like the oil and herbs, the bleu cheese and I also like a nice dollop of maitre d butter.

For a sauce, au poivre or a Béarnaise would be my favorites. Clarified butter ain't bad either.
