Had a coworker tell me she couldn't eat at a restaurant because they "might use MSG and that would give me a migraine"

I laughed.

That's my MSG story.

The butcher I get my pork sausage from has MSG in it. he makes it in house. Best sausage ever!

It's also found in Anchovies, Mackerel, Clams, Scallops, Oysters, Egg yolks, Shrimp, Chicken, Parmesan cheese, Roquefort cheese, Emmental cheese, Cheddar cheese,
Mushrooms, Walnuts, Tomatoes, Broccoli, Green peas, Corn,
Potatoes, Cabbage..........

Your laughter displays your ignorance. While MSG does not cause migraines in average people, it is one of the key triggers for those who suffer from complex migraines, which are not simply headaches. I do agree that MSG is improperly demonized as some form of poison, but it is poison for those who have an aversion to it.


If your coworker does indeed suffer from migraines then she is smart to avoid MSG.

ETA:

There’s no chemical difference between the glutamic acid found naturally in some foods and that found in MSG. This means your body can’t differentiate between the two types.

sodium salts are a migraine trigger for many people myself included. Fortunately I seem to have aged out of it but thru my teens and early adulthood it was a constant struggle...two or three a week

that said, MSG was originally synthesized from seaweed (kombu)

I don’t know how much to use. I just add a little and taste. Add more if needed. I add it like salt.

I don’t think many people realize that “Accent” is just MSG.

A good rule of thumb is 1/3 msg 2/3 salt. That's a real rough rule of thumb, though. MSG has it's place in my kitchen, but some people think it's a cure-all, and it's not. Your base recipe must taste good. MSG just makes it taste a little better.
