Any cant miss restaurant(s) I need to hit on my free time?

Jack Stack for BBQ and get the burnt ends. Heading up there next week! Can't wait.

Also that Jack Stacks place looks like a chain. Not sure that is the type of place I was looking for, but I'm not against giving it a go since there is bound to be one close to my hotel being its a chain.

There are 5 of them in the KC area... it's not like you'd be going to Red Lobster.
Arthur Bryant's if you want a more low-key KC BBQ experience.

Sister and bro in law live in KC and I just visited last weekend.
I've never been but they love Jack Stack. It is pretty pricey, though.
We went to a BBQ place called Slap's that was really really good.
I've also been to Joe's Oklahoma and it was also incredible.
You'd get a good BBQ meal at any of those three.
We also grabbed some beers and a quick bite at a KC area pizza place called Minskys. I enjoyed the wings and pizza we had and it was pretty cheap.

Bluestem is one of the best high-end restaurants in town if that's what you're looking for...The Westport Flea Market is probably the best burger you can get in town for about $10 if you want to slum it for one meal.
For BBQ, Jack Stack is great, and so is Joe's. If you want to go to the Brooklyn Ave location, Arthur Bryant's is a cool place to go, but I think Jack Stack and Joe's have better bbq overall.
If you have a car and don't mind a bit of a drive, Justus Drugstore is about 40 mns from downtown (north KC) but their menu is very much midwestern farm to table and would be a great place to go if you have the time.

Oklahoma Joe's is my favorite BBQ up there.
Grinder's and their deli next door are pretty good. Grinder's is a pizza or bar food type place and Grinder's West is a pretty decent deli.
I have to make my rounds while I'm up there for work.

Jack Stack is good and like somebody said they are a local place with 5 locations. Good place to eat downtown called cork and clever and a nice sports bar called "The Peanut" out by overland park.

Joe's OKC and Jack Stack's set the tone there IMO eat at both

The wings at The Peanut are insanely YUGE. The sale the wing, flapper, and tip from ostriches and call it chicken. 6 wings equal 18 typical wings. They were good, but not the absolute best I've ever had. The locals sure are proud of them though.
I had Jack Stack's three times during my five night stay in KC last year. The burnt ends are good for an app, but I wouldn't get them for the entree. Their sliced brisket and ribs were both divine.
We are at a steak house in the old train station that was a cool place. I can't remember the name of it however.

Oklahoma Joes is now Joe's KC, I believe. It's fantastic, and I have eaten at nearly all of them up there. Be sure to eat at the original in the gas station.

Just got in from drinking. Bar hopped some but did end up having some drinks and burnt ends at a place called Charbar that was either amazing or I was just starving and drunk. Possibly all of the above. I do remember it was in a neat little neighborhood.... I have to work to work for around 9am so thankfully shite ahut down for the most part at 2am.

Joes, LCs, and Q39 are the best BBQ I've had yet. Didn't care for Jack Stack or Arthur Bryant's. LCs may be the best sauce I've ever had. Burnt ends at joes were damn good.
Make sure to get some beers from Crane Brewing if you like sours.
Beer Kitchen is really good and the Beer Station has probably the best selection in town.
