I just created the most amazing sauce to pour over my butternut squash

Fresh basil leaves... about 10-15 big ones
About 20 or so fresh blueberries
One small carrot
Two tablespoons Greek yogurt
One tablespoon mayonnaise
1/2 teaspoon sugar
One Clausen dill pickle sandwich slice
Salt
Black pepper

Emulsify it all together.

Just stuff I had in the kitchen... didn't want to eat the squash plain.

The carrot seems a bit out of place, but I'd try it.

The best sauce for squash is a simple brown butter sage sauce

Yeah, it's quite a coincidence that you posted... I decided that this would be better with the salmon I'm grilling. Doesn't seem compatible with squash.

I like a little maple syrup on butternut squash when I'm roasting them, if I'm eating them by themselves..
Red Gravy on Camp St in NOLA has a delicious Butternut Squash and pasta dish with a nice sauce and a fried egg floated on top.. It's quite good.

I do a homemade butternut squash ravioli served with bolognese. Had it in Ferrara, Italy and it was great. The slightly sweet squash with the savory bolognese works really well in my opinion. Sage brown butter sauce is the standard for the ravioli though.
