I'll try it again but man... I just couldn't get into the taste and texture combo. Just didn't sit well. Probably try it melted over grits to break it up.

I've been looking for a solid head cheese recipe for years. There is a guy in Brusly who makes the best HHC that I've ever had; big hunks of pork in it and just the right amount of gelatin. He makes big batches to sell a couple times per year - It's fantastic. Bourgeois in Thibodaux makes a really good one and Jerry Lees is not too shabby either. HHC on a ritz with a shot of creole mustard....a better snack there is not! I've never done the melted in grits thing but my father in laws raves about it. Leave that store bought stuff alone - yack!!

porches makes some good head cheese. but his sausage is even better. it is my go to sausage for jambalaya. y'all have me craving the cheese now. Will have to get some next week for the camp.

For those wondering, that's the ' 11 vintage, in a 60 qrt pot, just before molding it up. It was a good year.
