I love hot head cheese...but have never tried the melt over grits...sounds great...but no good head cheese here in NE Ohio...have to wait until my next trip home to partake...ya'll making me homesick

What size on the butts? How long will it keep? Can you freeze it?


This recipe looks to make a bunch. Either you'd have to really like it or have a way to store it.

It freezes well for a few months. I think the butts are usually 6 to 8 lbs....not certain. I'll keep it in the refrigerator for a week before freezing.

my uncle used to slaughter two hogs per winter...start at 3 am.. took the required components to this 90 year old lady who made hogs head cheese for the workers and served it before noon...this was back in the 60's and it was great

only the high end restaurants are very legit..summers are great weather.. that's about it..but the $$$ is great....I can only stay away from LA for about 4 months at a time before I get my home/family fix

that was just part of it. Otis, the boys and i ran through alot of that and a box of Saltines that night.. The Christmas present stuff was on a big table that really had alot of containers on it...

Y'all need to come up to nela and attend our head cheese and sausage makin', black tie, gala affair.
