Having a baby, need prepare ahead meal ideas

My wife is due in about 3 weeks or so and we are trying to come up with some simple meals to freeze and cook/heat up during the first week or so.

I'm hoping this is a good idea? We're already planned on putting a lasagna in there ready to go, what else could we do?

Family and friends will likely do this for you. You really only need maybe a week's worth of food. You will likely have cravings and be ordering out anyway. That's how it worked at my house.

"You want some of that lasagna that my mom made?"

"I really want a burger from George's"

"Be back in 30 minutes..."

Puréed soups sans any dairy which you can add before serving freeze well.

For a fresh meal, pick up a roasted or smoked chicken and roast some fresh vegetables in the oven. Sam's chickens are meaty and good. Roasted veggies are quick and easy. Line the baking sheet with foil for easy cleanup.

Cooking a rump roast is also easy and you can make rice in a rice cooker, roast a veggie or throw a salad together quickly. Leftovers make good poboys. You can also vac seal roast servings if you make it ahead. You can do the same with a good smoked ham.

Tamales worked well for us. They froze up well and reheated quickly. Frozen burgers as well. I agree with the posters talking about take-out cravings. If you could freeze sleep, I'd focus on that.

Kid #2 arriving in ~6weeks at my house as well, so we are going to freeze up some goodies.

Another tip,
Walmart has these in a 3 pack for cheap and include the foiled/cardboard lid. They work well for freezing up excess leftovers.

I just smoked a pork butt Sunday and enchiladas sound pretty awesome. That will happen.

OP might get more responses with a title like "need make ahead post baby meals" or something similar.

Pointless. Assuming this is your first child, you will probably do better having staples on hand (pasta, chicken breasts, ground meat, etc...) that can be thrown together in 20 minutes than cooking and freezing.

How is defrosting a completely cooked dish any more time consuming than a 20-minute throw together? Don't get the logic behind this one. 1-serving size containers of frozen gumbo are the cajun's equivalent of an MRE. You can survive any trauma if you have homemade gumbo in the freezer.

Ok, so a big pot of gumbo frozen and put into individual serving sizes. That is all fine and well, but the average person's freezer is now full of gumbo. With a newborn, you will find you actually have a surprising amount of time on your hand (again assuming its OP's firstborn). The kid for the first few weeks will mainly be asleep. You arent going anywhere, so you might as well stay home and cook.

Plus, dont underestimate that the wife in this case will probably not want gumbo for every single meal. Well unless she is some sort of sueprhero.

We didn't prepare any meals ahead of time and I totally regretted it. I lived on peanut butter and Wheat Thins for several weeks. Stock up on easy-to-eat snacks with high protein for your wife.

You might also consider keeping the ingredients to make your own pizzas on hand.
