Gonna turn these into a shrimp dip and some other things for the menu.

Any suggestions to play with would be appreciated.

At work.

These are headless that restaurants get to cook with.

5 lbs left in fridge overnight and thawed, so I boiled them and am looking for some recipes to play around with.

I love a shrimp salad. Not the chopped up kind with mayo, but a nice bowl of crisp lettuce-gem lettuce is my favorite, plenty of sliced hard boiled eggs, fresh tomatoes, avocado and a creamy dressing like Cousin's. One of my favorite things in the summer.

Umm... If seasoned well, then just eat as is. Spicy boiled shrimp is one of my Top 8 favorite foods.

I did eat as is.

I need ideas to serve in dishes for customers.

Already doing a pepper jack shrimp dip. Gotta use 5# up though, so looking for more.

My mom makes what she calls Super Shrimp dip, and it's pretty much all shrimp. I'll post it if I can find it. She used to make it for all of the doctors offices that referred patients to their physical therapy clinic. She brought it over with Ritz, it was a hit like you'd never believe. Looking...

Mom's from Abbeville, so this is either some old Cajun thing or something she made up.

Shrimp and corn soup or bisque then. The boiled flavor will add to it.

You could make the Super Shrimp dip more modern by making it with fresh, not dried or frozen, ingredients, but I'd think you have to add more. Anyway, it's something to play with.

We make a similar dip using the food processor. Always popular.

My mom always chopped the shrimp as well as she could so the dressing would distribute evenly, but they made huge batches so there was variation.

This is definitely a 'play with it recipe', my folks would stand over each batch tasting and seasoning until it tasted just right. It's all shrimp though, boil them well and it's going to be good.

Besides the obvious standards like remoulade & shrimp salad, how about pickled shrimp? Can be used not only as an appetizer, but as a garnish for other items, including bloody marys. Saveur recipe here: LINK

How about vietnamese summer/spring rolls? Cooked shrimp, rice noodles, herbs, etc wrapped in rice paper....and a peanut dipping sauce. Like this: LINK

Veracruz style shrimp cocktail is a favorite of mine, and with Cinco de Mayo this week, you might find some interested customers. Another Saveur recipe: LINK

Good suggestion. A shrimp tortilla soup would also work. Make the tortilla soup and drop some of those shrimp in it. Shrimp quesadillas and/or shrimp tacos are more simplistic uses.

Shrimp rolls like lobster rolls is another suggestion. Had one at Peche a few weeks ago which was very good.
