Good fish to grill

Hey guys, I'm new to fish grilling and I was wondering if anyone could give me some good tips as to the best type of fish to grill and maybe tips of the trade. I'm not a big fan of salmon, but everything else is game. Thanks

As far as local fish goes, you want firm, white fish. Redfish, Red Snapper, Cobia, Mahi, Amberjack are all great on the grill. Avoid more delicate fish like trout if you're grilling.
Most of those listed are great all on their own and don't require extravagant recipes. Any are delicious with just salt and pepper, melted butter and garlic.

Redfish, snapper, and mahi can be found at most places....cobia and AJs will probably be found at an actual fish market.

Amberjack and Cobia hold together well.
Snapper and red fish are good on the scales.
ETA: I have also had good results with shark.

My favorite with a LARGE fry pan is to sautee galic & hot peppers, in butter/oil then theow in several bunches of chopped shallots for a couple minutes then throw that redfish flesh down in pan to sear the flesh. Then throw on the grill scales down coated thick with the shallots. I put a cookie sheet & tinfoil underneath and keep adding a little water to keep from drying. Cover and grill/smoke for 15 minutes or till done.

Cobia is the one, I'd say - it's hard to mess up, and you don't have to spice it up with a bunch of stuff.

i do catfish on the grill every once in a while,, BUT, always in a foil boat.. No grill marks, but, good smoky flavor..

You do know it is a freshwater drum same as a redfish and tastes exactly the same.
