Quick story for you - this morning, I was driving down Tchoupitoulas toward the CBD.

Just past you know what was an old building with fancy graffiti way up high in the air.

It read "WAL-MART KILLS CULTURE"

I don't want to make it sound like I am hating. As a small business owner, I am all for stuff like this.

I am just being realistic though. Whether they are using this as a stepping stone or not, I do not think that one sets out the sell food out of a truck for the rest of their lives.


Cut the passion, pride, all that blah blah bullshite. I understand all of that, and i realize they are doing it because they love to cook, and I am sure the food is good. That is not what I am talking about.


You say you have orders for 6 food trucks.... and its been a few months since the food truck craze has started.... How can you NOT call that a fad? That you are building 6 food trucks on the heel of all these other trucks that have just started up???


Answer me this, how many food trucks were at that show the other night?

In 5 years, how many do you think will still be in operation??

If you cant make money doing it, you wont do it. Bottom line. I dont care how much you love to cook.

As far as choosing to go mobile, the overhead is obviously cheaper than running and maintaining a restaurant.

This is what's definitely driving these people - not the "We love bringing it direct!" malarkey.

It's also not a coincidence that they are savvy enough to set up camp where a lot of people have been drinking.

Nothing wrong with a little entrepreneurial spirit, though.

Im not saying it is some taboo thing.

But there is a food truck craze going on right now that definitely deserves the label as a fad.

It's not that the food is bad or anything. But some things are NOT better in numbers. Esp in a small area. To compare BR to NYC or even Philly is just stupid in that regard.


i cant say this enough..Im not saying the food is bad. Im just saying, I dont think this is a long term way to make a living for all these people. Some will make it, most wont.

Lester, just because Baton Rouge and most other epicurian wastlands in this country became a fast food heaven doesn't mean that it went out of style everywhere else in this country, and the world for that matter, and it's nothing new here in this country. The point was that we've been here before as a nation. We just forgot what normality was, flipped it upside down, and now anything that deviates from our current nutso world is considered abnormal. It's a very strange turn of events to be sure.


BTW... It's been going on strong in Austin for probably about 3 or 4 years now.

Im just saying its a fad. One person sees someone do it, and now everyone wants to be a part of it. That's why I think most will not have long term "staying power".

So Lester, tell me... What would it take to make it NOT a fad? To maybe put out better food than you can get at most brick and mortar places around town?

You're missing the point completely. I assume you think it's the TRUCK that's the draw, when it's actually just a tool to be used to bring people awesome food. Yeah, it's different, but it's not the TRUCK that keeps people going to get food... It's the FOOD. So, unless you're saying that eating really good food is just a fad, then I really don't know what to say about that, but I'm moving. Good Luck!

Looks like it's one of those terms that are subject to interpretation, but I guess my overall point is that if good food is a fad, we might all want to move on.


I don't care if it's in a truck, trailer, or a anchored to the ground with concrete and steel. It it's good food, then it's just good food and people come back for good food. They usually don't for crap food...


WELLLLL Let me say UNLESS they have enough TVs and Video Games, oh and Big Titties to compensate for the lack of food quality. THEN I guess it doesn't matter.

Was out of pre-breaded Sysco puppy patties, what other options did I have? Puppies are just a fad anyway, won't miss it long.
