Wasn't an argument, darlin..

Just figured that maybe people were now buying food from some trucks, instead of maybe bringing their lunch to work. (either to try something new, or a new option)

An opinion. Kinda like your I had to wait so long blah blah blah, when there were 3 options minimum that were getting food out in less than 3 minutes, which was a good indication why those 3 were sold out by 830 and 9.

I hear ya, but I don't see that. It's a way for people with real talent but not an arse load of money to drop on a brick and mortar to get in business and do their magic in the kitchen. Tons of them move away to NOLA or elsewhere in the country all the time to escape mediocracy here. There will always be a market for these kinds of things, and incorporate it into catering as well. It just makes sense, and the food quality beats anything fast food could ever dream of pulling off. If anything, I see tons of trucks on the road in our future, and food quality is going to have to go up in the area as a result. Either that, or you can bet that these restaurant owners are going to try and screw the trucks with their influence. What D'Agastino said is evidence of where I think it's going to come from, heavy restrictions to make it very difficult on them, and then perhaps they will relocate to another area that desires it as well, but it's not going away IMO. BR would just suffer from it because of the big daddys choosing to swing their big sticks rather than raising their own bars at their establishments, but it's not going away. The market is viable, and people are really hungry for new experiences in food, something you're not going to get in a big restaurant in this city because they play it ultra safe, and are scared to death to get outside the box. That generation is going away Lester. The new generation is taking their place, and that's who's flocking to these trucks all over the country right now, not my dad's generation. They just don't get it in any real numbers.

I don't.

It misses the point entirely. These people wouldn't flock to a Popeyes food truck to get fried chicken they can get at a Popeyes location. The whole idea is to do bad arse food and do it low budget. What Popeyes employee do you think is going to pull off an amuse bouche, or forget that, which one is going to cook something from scratch without a manual in front of them?

No, Popeyes would be an enormous FAIL. It's the alternative to that kind of food that makes food trucks such a draw, not fast food.

Actually most of the truck owners are LSU Alumni, with plenty of capital, and solid work ethics. You'd be suprised how much money a person can make, if they're willing to bet the nuts and/or do something that others are too lazy or not sagacious enough to do.

The concept is about QUALITY. The people cooking in these trucks are not just out to make a buck. They're out to show the city that innovative cooking, real flavor, and hard work will keep you coming back for more.

This concept is new. And is going to be a hard sell (until you bite into some of the best food you've ever eaten)

Exactly, and to further drive that home, people wouldn't do it if they didn't have an extreme LOVE for food. There's plenty of easier ways to make a buck in this world of ours than to operate out of a food truck cooking food from the ground up, being creative, taking a more difficult albeit principled approach to cooking, and making people have to change their pants when they get home. For that matter, isn't that what constitutes a chef working 60 and 70 hours a week? You had better love it, and those that do DO.

Curious Jambo, and I know it depends on equipment and other things, but what would you say a truck ready to go would run?

New truck 40k for bare truck
Used truck 10-20k for bare truck

Equipment, hoods, AC, Windows, Lights, Generator, ETC brings the total up for anywhere between 25k-100k+

Also, depends on what you're cooking, and what you're packing.

That's kind of in the ballpark of what I was thinking. The hood system and flat top is what I would think would set you back, and I'm sure it's challenging with size and the like. I've got some ideas about getting equipment, but I was kind of curious what you thought it might run.

For the past year or so. It would be a complete about face from what I'm doing, but I am. It really gets me pumped at the thought, and I think it would really be very fulfilling for me, not without many lessons I'm sure of, but very fulfilling.

Got ours for $12k but it was a sweet deal. The equipment in it alone is worth well over that. Cold prep station ($3k new). double 45lb fry station($9k new), hood system, A/C, stove, stainless tables, generator.
