Just a heads up...

Curbside, Taco De Paco, Ninja Snoball, and Go Ya Ya will all be under the Interstate overpass on Perkins this Wednesday Night at 6pm to 2am for all interested. Look on facebook or twitter for further details. A DJ will be there as well for entertainment.

If you've never, you need to try Taco de Paco's lineup and Curbside fo sho... Both well worth it.

eta.... Other truck that will be present:

Latte e Miele Gelato
Kickers BBQ

Think I will. Hope my Fat arse dieter club members aren't monitoring this thread and hanging around. I might fall off the wagon.

Then they might send me to Camp Puttadaforkdown.

BTW guys and gals, Curbside grinds their own meat and makes their own fries, and Taco de Paco is off the hook in their own right with Aligator Tacos this Wed. This is going to be a treat.

Now, not sure how the real fresh cut fries is going to compete with those legendary Five Guys fries, but I'm sure they will try real hard.

H emust not be double frying. I like to fry twice at two different temps (low then hot). I find that this produces a better result. He also may not have the capability to fry to order with only one deep fryer, so he has to make large batches that sit and wait to be served.

Why would you fry low then hot? It doesn't just make them greasy?

Maybe low was the wrong word. Lower is what I meant. First, I blanche a whole mess of potatoes (thats a precise measurement). Then when I am almost ready to serve, I fry them again at a higher temperature for just a couple of minutes to get the right color and crispness to them. I think it makes a better fry, and increases my ability to serve fries to a large group in a timely manner with only one deep fryer.
