Anyone know some good and easy ideas on how to cook duck? I would like to try a duck and andouille gumbo. I've cooked gumbo before, but are there any tips I should follow for duck and andouille? Any other great recipes y'all know that I should try?

Chef John Folse. The link here is close but not exactly the way he states it in his cookbook "after the hunt". Close enough though

Look in the Recipe Book above. The Duck n Greens is a good one.

Good and easy duck breast recipe:

Season entire duck breast with salt and pepper (and whatever other spices you like). Saute breast skin side down in a bit of olive oil for 5 minutes. Flip and place entire pan in 400 degree oven for 8 minutes for perfect medium rare.

At a tailgate recently, they served Southern Fried Duck Breast. The duck was sliced in strips and fried like chicken.. Delicious.

I cut breast length ways in three pieces and marinate. Cut thin bacon cross ways in three. Cut onion, mushrooms and bell pepper pieces for k bobs. Wrap the bacon around the breast strip pieces and assemble for k-bobs on wooden skewers. Q them up.
