I ended up using tasso, but not a whole lot. Picture isn't as pretty as the John Besh one, but it tasted good.

Looks kind of greasy Darla. Should have used R2R's in lieu of Besh's.

I prefer no pork products in my seafood gumbo as you know since I'm a "purist". I think the seafood can be overpowered by the taste of andouille, smoked sausage or tasso and I'm not a fan of seasoning used on some tassos in gumbo. A lot of those included chili powder, a flavor I don't want in gumbo. Personal preferences.

That being said, I wish I had a bowl of your seafood gumbo right now! I love crab fingers in gumbo. I use gumbo crabs sometimes for the stock, but I don't leave them in the gumbo.

I don't mind andouille in seafood gumbo at all. I also love crab fingers in my gumbo. Just personal preference. What I don't like is a chicken, shrimp and sausage gumbo. That's just wrong. And keep crawfish out of gumbo. Save those for bisque, stew and etouffe'

Given: Seafood gumbo is a gumbo made with seafood as the protein.

Given: Pork is not seafood.

Conclusion: Pork does not belong in seafood gumbo.

It's simple logic!

Hypothetical- what if you threw a kink in the givens and called it a seafood and andouille gumbo...Will that be justification enough to eat it and call it delicious or should we just write it off as catshit on principle?

I know I am a group of one, but I like chicken in my seafood gumbo. My favorite is chicken and shrimp. Love the way chicken and shrimp gumbo tastes.

If this is still going tomorrow I will take a picture of the gumbo I made today.

Catshit. A man's gotta have principles. Lines must be drawn!

Next thing you know, people will be putting tomato and okra in there and insisting it's still delicious gumbo.

F the haters I love bones in my seafood gumbo

I even throw a whole chicken breasts and thigh in my chicken and sausage. Love sucking the meat off the bone. Lol

I put smoked sausage & smoked ham or tasso in my seafood gumbo.

But I also sneak a few oysters into my chicken & sausage gumbo...try it and see. Oysters give a chicken gumbo an amazing depth of flavor without being overtly "oystery".
