Cream Cheese and Candied Jalapeno Stuffed Pork Loin (with pic)

Bought a pork loin and decided to do something different with it. Found some candied jalapenos at Albertsons. Made a cream cheese and candy jap. mixture. On one end of the loin I took a filet knife and made a slit in the center throughout the length of the loin. I placed the filling in a homemade pastry bag and filed the center of the loin with the mixture. Hung it vertically in my Big Easy infrared cooker and cooked until medium. Glazed it with pepper jelly after I removed it from the cooker while it was still hot. One of the best pork dishes I've ever had.

Very cool technique .. never seen a pork loin done that way. Sounds and looks superb. Good call on cooking it medium. I like a pork loin to 150 then let rest for 15 minutes. I would destroy that.

That looks very tasty. I love a pepper jelly glaze on pork. Most jelly glazes on pork are good.

I love pepper jelly, and I've never had it on pork that I can recall. Looks awesome.

I've got 6 jars of candied jalapenos I canned about a month ago. I see smoked pork loins in my future.

At albertsons on highland and airline. I think above the mexican food section. They have a few different varieties of japs.

Sorry Walt. I will try to take more/better pics from now on. I just learned how to post pics and this is my first one. I'm a big cook so this will be the first of many pics to come.
