Crawfish taste

I'm using "The Crawfish App" and was going to buy two sacks from the cheapest vendor. Before doing so, is there cons to going cheap? Is crawfish just crawfish for taste reasons or does more expensive vendors tend to have bigger crawfish?

I'll try and reword it better. Trying my best to save money, but don't want to lose value in taste. Knowing that, how would you go about buying crawfish?

The supplier you buy from is more important than size. The crawfish need to be handled correctly...some do a better job than others.

Just get the cheapest then. There will probably be mixed sizes. Select are the best but you pay a little premium. Taste will largely be based on how well you season and boil.

Only issue I ever had going way cheapest was not the size, but the large amount of dead ones.

I think it was a fluke though because I've gone through them before and it wasn't like that.

I was looking at the app yesterday and it showed the Crab Man in Mandeville had live for $0.99/lb. I've never dealt with this guy before but that's cheap. There were a few places that were double that price and they were the next cheapest places. Has anyone dealt with the Crab Man? If so, were the crawfish good quality?

This is a noob question, but what causes the 'bad' crawfish you sometimes experience? It has only happened to me a couple times (Brightside and City Cafe), but I've had crawfish before that wasn't the deep red color you usually see. They were heavily spotted and more of a light color overall. They were also filthy and cracked/crushed, which I assume is a handling issue.

Need to do some trial and error of your own when it comes to your vendor of choice. I go to Hole in the Wall in Port Vincent for now on. They aren't always the cheapest but I have always been satisfied with the size and quality of their bugs.

Some vendors may not clean their bugs like others may. Like someone else mentioned, you could have a large amount of dead ones in your sack.


Some places even separate their bugs by size. Personally, I like the medium/large size. You get more per lb in a sack than you do with selects.

As for taste, that is all up to the chef. All depends on how they season them. Nothing really to do with the vendor.

There's over 30 species of crawfish in LA, different species in different stages of life will look different.

I've gotten shrimp and crabs from them before. Good people and most importantly, the cheapest you can find seafood on the NorthShore.

They're a "mobile" operation that sells direct to customers. They can deliver to you if needed but usually meet at the Shell Station on Hwy 59 just north of the exit from I-12.

The husband is the fisherman. Does all the crabbing, shrimping and crawfishing. Their product is some of the freshest you'll find on the NorthShore. The wife runs the business. They're great people. From the pics I'm seeing on their Facebook page of other customers who've gotten crawfish from them this season, their size looks great.

They "walk" their crawfish for cleaning and sell unwashed too for cheaper.
