Crawfish boil leftovers

I know what to do with the bugs but am looking for suggestions on what to do with the leftover veggies. I've done potato salad and hash browns and am out of ideas. Does anyone have any good recipes for the corn or other good potato recipes?

Freeze the potatoes. While cold and hard, dice them quickly.
Then deep fry them.
It's like a French fry but with a ton of flavor. Addictive.
Eta: could always do crawfish, corn, and potato soup.

i take the corn and a can (or two) of rotel and sautee for a little while and then bag it. instant corn maque chew

Crawfish boil potatoes make good roasted potatoes, also. Depending on the size of the potato, I'll cut them in half or in wedges, toss in some olive oil and roast them in the oven. Creamy on the inside and crispy on the outside.

Grate the potatoes and make hash browns. Maque choux with the corn/sausage.

I mashed all my leftover tators together and put them in the fridge.
a few days later I laid them out on a baking sheet and baked them at 450 for 15 minutes or so to crisp them up, then tossed them in a mixing bowl with a spoonful of cream cheese, sea salt, cracked pepper and garlic. shite was money!

Crawfish boil potatoes would be great for Crash Hot Potatoes too.
