Chorizo ideas?

I normally take chorizo and pan fry and then drain most of the fat, add eggs and scramble it all together and add some raw veggies and make breakfast tacos. I have also made plain chorizo tacos with chopped onion, cilantro and fresh lime juice. What are some other was to use chorizo? I can see adding it to ground meat for burgers.

I use Chorizo to make Sunny Anderson's stuffed jalapeños. Legit.

I like it fried into oblong patties and eaten on a taco. Or as a torta filling, the Mex version of a hot sausage poboy.

Marciante's chorizo on the grill is amazing. A grilled sausage on a good bun with onions and peppers with melted provolone is about as good as it gets.

stuff dates then wrap in bacon and drizzle with some honey. amazon

I like chorizo but everything I cook with it gets too greasy. Anyone else have this issue?

Are you cooking the chorizo separately and then draining it before adding it to your dish?


I've seen a couple restaurants around here that have a chorizo queso dip. It sounds good but nobody will share it with me

I love dates stuffed with dry cured Spanish chorizo, but I think the OP was referring to the uncured, uncooked Mexican kind. I can't imagine stuffing a date with the usually very fatty Mexican kind.

I use it all the time. Goes great as a stuffing, in chili, and sometimes I'll mix it in when I make hamburgers. Pretty much anytime I feel like adding it in with something.
