I have several of the Victorinox chef's knives. Good buys. I have Wusthof, Henckels and Cutco. Chopping with a serrated steak knife would annoy me and slow me down. I'm not that fast anyway.

Best knife I've ever owned hands down. It is a joy. I find myself wanting to cut more stuff after I'm done using it . This is one that he collaborated with Zwilling on. They sell on Amazon for ~$300. I can only imagine how good his handmade ones are. One day...

I have a 10inch victoronix purchased actually in Switzerland. I absolutely love the knife. It'll cut anything.

Some nice knives here. I use a Shun Classic everyday at home and Henckels in my knife roll when I go to the camp.

I'd love to have a really nice knife one day, like a Kramer.

I'm jealous of all of this japanese steel!! I might need to go shopping!!

What do all of you guys use to sharpen your knives? I use a Work Sharp Ken Onion sharpener.

I use Shapton whet stones. Works really well. You need to look on chefknivestogo.com

They have Japanese steel out the arse and most of it is handmade.

My wife likes to buy me these sorts of things as gifts. I might have to "accidentally" leave my browser open to that page so she can see it and get some ideas.

Got a Tojiro parer, and it's a damned lightsaber. I'm good for now on chef knives, but I'm gonna get the gyutou if I get the hankerin' again. Can't go wrong for $50.

Got a Shun premier 8" chef's knife as a wedding present...



Love it, so last year I asked for (and received) the 5.5" santoku knife for Christmas to go with it.



And the lovely wife got me the 4" paring knife and 3" vegetable knife from the same line.. both are great.



Have a few more from the same line on this year's wish list... we'll see if I add to the collection.

Same, but sub out that veggie for the bread knife.
