The problem with shun is that you are paying more for name than quality. The type of jap steel gyuto you could on chefknivestogo for the price of the 8" shun would blow it out of the water. $250-$350 (price for the nicer shuns) would get you a phenomenal handmade knife made with badass steel, wouldn't be close.
