This couldn't be much simpler. Take some peeled and halved onions into a hot cast iron skillet with a touch of oil. Get some color on those, then drop in the carrots. Transfer to crock pot.
Next, season and brown the pork on all sides.
Add to crock pot. I tossed some garlic cloves in the oil for about fifteen seconds, then deglazed the pan with homemade chicken stock and into the pot it went along with a dash of soy and Worcestershire sauce.
A few snippets of rosemary and thyme from my garden, the lid goes on, and so does the crock pot to low for about 7-8 hours.
The smell it emits is worth the price of admission, but the end product will be money.
Cost: Under ten bucks for about three portions.
