I wouldn't say raw, because they were at least edible. The pink down to the bone might be attributed to something in his rub.....perhaps some sort of nitrates in the form of Morton's Tender Quick. We know he loves the almighty smoke ring. Nitrates can enhance or deepen the smoke ring, or create a fake one if the cook is having trouble developing a consistent one.

Pretty good price considering the specialty of the particular cut and 50% loss smoking a brisket. Not sure what he's paying per lb for a brisket but he's probably over $6 lb his cost when it hits the cutting board. Just talking straight product cost - not labor, profit and overhead.

Total shift from what they told me at the order window yesterday at noon, that the only way to get them was if you purchased a platter. Not available otherwise (by add-on, plate or lb.).

The doors opened 3-1/2 weeks ago, and the burnt ends have jumped up $6/lb?!?! Wow. Is his Jim Jones Kool-Ade still the same price?

Maybe he and his partners decided since the burnt ends were so popular and limited they would make adjustments to the menu? Shift focus to other cuts and menu items?

Or......make some adjustments to his bbq technique, and cook the other cuts of meat better. If he consistently cooked a moist flat and tender ribs then these other cuts would garner more focus from his market.
