BO: gas assisted. only electricity to turn the rotisserie and power the control board. IE: heat source comes from gas and wood.

Don't get married to a certain IT. Every brisket cooks and finishes differently. It's done when your meat probe goes in with little to no resistance. Take it off of the heat the first sign of it feeling that way, and rest it till you're ready to serve it. ...

Smoked chicken and jalapeno sausage - probably my single favorite item from both places.

Day 1: Billys. Overall very good.
I had -
Boudin balls (both), I like the regular over the pepperjack. Excellent either way.
Boudin roll/wrap, my favorite thing there.
Boudin pistolette, not my favorite. A little chewy.
Seasoned cracklins, good mid afternoon snack.
