You could do a couple of different frittatas. They work great because they are good either hot or room temperature.

Quiche with shrimp and crabmeat.
Prep the night before, pop in the oven day of.

You can make quiches ahead of time and warm them the morning of. There are a number of French toast casseroles out there that are made the day before and then baked the morning of. Same with the sausage, egg, cheese etc.... make ahead casseroles.

Also, sour cream pound cakes are darn good for breakfast. My sister mixes them the night before and then turns on the oven when she wakes up. She also makes a ton of bacon the night before and warms it up the next morning. You can do the same with sausage etc...

I'm about to be mega trashy, but I love those sausage and cheese drop biscuits.

I don't think I've ever had those, but if they're anything like sausage cheese balls, I would love them. I love those sausage cheese balls with Bisquick or whatever. What's trashy about a sausage and cheese biscuit?

ETA: A friend of mine brings me those flaky sausage and cheese biscuits from Central Market. Warm them up, add butter and my goodness. CM refers to them as scones, but they're more like a flaky biscuit to me. I have some in the freezer. Now, I want them.

do a full spread, just prepare it a day or 2 ahead of time. Get some sterno and some disposable serving dishes and just dump it in and let it heat that morning

My mom makes a breakfast casserole with jimmy dean sausage, eggs, onions, red and green bell peppers, crescent rolls, cheese. It's so good.

I'll try to find the recipe.

I made a polenta, egg, andouille, and green onion casserole for Thanksgiving breakfast that turned out pretty damn well.

Cook 2 cups (dry measure) of rice in 4 cups of chicken broth and place in casserole.

Sauté 1 cup of chopped onion and 2 cups of chopped celery in 3 tablespoons of butter. When tender, add two tablespoons of flour, stir and cook for three to five minutes then add two cups of milk and simmer until a medium thick sauce forms. Season to taste with salt and pepper.

Cook two pounds of country (Jimmy Dean) sausage drain fat and break into chunks. Scatter over rice.

Cover rice and sausage with sauce and bake in 350 degree oven for 30 minutes.
