Big Pot Recipes - Not Jambalaya

Fans-

Playing the gators this weekend and need something new to cook. Ive got a 20 Gallon Pot and will be cooking for 15-20. Yeah, I can cook Jambalaya with the best of 'em, but need something different for this weekend. I prefer on pot recipes.

Idea's or recipes PLEASE.

Edit- I live in Florida, will be cooking with some gator fans, but I still bleed purple and gold! It blow these guys minds when I go to sam's and get 50 lbs of rice, or include onions and garlic in everything I cook.

Sauce Picaunte, although I'm not a fan of a tomato gravy in a black iron pot.

Pastalaya
Chicken, pork or beef Stew

If you really want to blow there mind see if you can find some pork neck bones and make a stew with that, maybe include some pork shoulder for extra meat.

Chicken Sauce Picaunte was my first go to, Wife doesn't want the red. Im leaning toward a Pastalaya with a white sauce, not sure how that will turn out in a cast iron pot.

Not sure about with the cast iron pot but you could also do a potato soup or a chicken tortilla soup. Both are very easy.

20 gallons is a lot for 20 people. Lol...... You could go as simple as red beans and rice or white beans with shrimp(different and people probably never had it).
BBQ Shrimp(new Orleans style).

Red beans are easy if you have access to decent smoked sausage or tasso. Found some smoked pig necks the other day and used that in there as well. People about killed themselves. For some reference... 5lbs of dry beans and 5lbs lbs of cut up sausage/andouille filled up my 5gal pot up to about 2-3" from the top.

Stews are great, gumbos, sauce picante, spaghetti of some sort....

I cooked 8lbs of white beans for a party that my inlaws had. Fed 115 people and had 5 quart bags left over. Filled up a 5 galling bucket about 3 inches from the top.

That's a lot of pot for 15-20 people.

I would suggest chili, sauce piquante or pork stew.

Buy a chuck roast and do a traditional stew over mashed potatoes.

-Cut your roast into pieces and flour and fry in butter
-Build a small roux with leftover fat and drippings by adding more flour
-Add mirepoix, bells, garlic, tomato paste, herbs
-Add red wine
-Put meat back in pot
-Add beef stock and put the lid on it for a few hours

20 gallons of food for 15-20 is WAY more than you could possibly need.

Not sure pastalaya with a "white sauce" is a good thing.

Gumbo would be great if you haven't done that. Of course, it's not a one pot meal since you need rice or potato salad. Same with etouffee, but shrimp etouffee would be another good one.

ETA: Speaking of poboys, roast beef poboys or fried shrimp and/or oyster or catfish poboys would also be good.

Are you sending everyone home with their own gallon for the freezer or something?

It's been a while since I made it but below is a link to Emeril's recipe.

Cooking for a Knights of Columbus fundraiser a while back I wanted to do something different to change things up. We served white beans and shrimp with fried catfish and they loved it. Many never had it and it opened their eyes(and stomachs)to a new dish.

Chili.

The weather will be cooperative also.

I am of the belief that an occasional tomato sauce acidity in the cast iron pot is not damaging but a good way to clean it out in a sense for reseasoning
