Before frying them. Same texture as normal but with a nice smoke flavor that doesn't overpower.

G&M meat market in Jearnette. Also great boudin. They only make a small batch of cracklins several days a week, so when you can get them they are fresh.

Absolutely! When my mom was still alive and living in Marksville I'd stop in at Juneau's and get some stuff when visiting and always got a bag of cracklins. It was difficult to not eat the whole bag on the three hour drive home.

Danny and Bonnie Seafood on 2205 Belle Chasse Hwy (right near the Popeyes on the WB expressway. Made fresh while you wait, great texture and spicy. They are like crack to me.

I believe these are the same people that own Roux 61. Always wanted to stop and get some just never did.
