Baked Chicken Breast

Anybody got a recipe for this that's not dry and boring?

beat the crap out of it with a meat hammer thing. nothing worse than chewy thick chicken breast

how bout this? its not baked, but...

smash on it with hammer, season with taco seasoning, cook in pan with a little EVOO, then melt a slice of monterray jack on top. maybe a little salsa on top.

i did something tonight where I pan seared them then put them in a pyrex (you could also use a dutch oven) with sauteed onions, crushed tomatoes and kalamata olives. turned out pretty well, wasnt dry and wasnt that boring

this is a go-to of mine

Put about a cup of white wine, 1/4 cup worch., a dash of olive oil, and a couple cloves of minced garlic in a baking dish along with a sprig of rosemary (leave it in-tact). Salt, pepper, and add your breasts (bone-in). Broil them, turning them every 7 or so minutes until done, being careful not to overcook or scorch. Simple and tasty recipe.

If they're bone in, i like to just inject them with some Creole Butter Cajun Injector and bake 'em. Seems simple, but damn good.

In a baking dish season the chicken and put a half cup of white wine, whole head of peeled crushed garlic and a half jar of capers. Roast at 375 for about 40 minutes and remove. Add a pat or two of butter to the pan juice and swirl in then pour over chicken. You can squeeze a lemon in it as well and any fresh herbs you like.

Any chicken you have will work well. I prefer bone in breast but keep a package of the boneless in the freezer for backup.

The boneless skinless fresh ones at Sams are very good, cheap and huge.

Good suggestions, all! (For the record, I'm partial to thighs myself...I just couldn't pass up good Amish chicken breasts on sale.)

Recipe i have used several times: 1 can cannellini beans (drained), 2 gloves chopped garlic, 1/4 cup greek olives (pitted) chopped. Mash beans with fork and mix with garlic and olives. Make a slit in the breasts to form a pocket and stuff with the bean mixture. Season the breasts and sprinkle olive oil over top. Place in a 375 degree oven for approx 45 mins.
