There are two safe ways to enjoy a burger like this if you have a weak immune system.

1. Grind your own just before you cook it.

2. Sous vide. A lower temperature over a longer period of time will get the same result.

FWIW, I ate two burgers that were most definitely undercooked this weekend (even by my standards), and I'm fine. So if you want to be just like me, eat rare!

...in that case you better go well done on those suckers.

Yeahhhh. Cooked like that, the texture just becomes a little mushy. That was my biggest beef with the whole issue.

I stopped eating my burgers medium rare after I learned about this in med school. Basically, there's bacteria from feces on the surface of the meat. Steaks are fine to eat rare because the surface gets seared, killing the bacteria. For ground beef, however, the bacteria gets mixed into the beef as it is being ground up.

So in theory you could trim the outer edges and discard if you were really obsessed with the idea

Likewise, you can't safely make a small rib roast out of two thick-arse ribeyes by tying them together. The inside surfaces, where the bacteria are partying, won't be cooked. I saw a butcher do just that once and I was like

I've eaten Kibbeh Nayeh several times without dying, but my mom trims and grinds her own sirloin tip at home. Wouldn't think of making raw kibbeh with store bought ground beef.

Me too. But it was made by pros from Laffy and I trusted them to use proper ingredients. I'm not going to eat a commercially ground product cooked under 155 or so. I like to dress up a burger and med well doesn't bother me...4 days of explosive shits will.
