2 days in New Orleans: Where do you eat?

Combination of expensive and inexpensive, small dishes and full meals - really good "New Orleans" food, not just touristy stuff.
Ever put together a gastro-tour over a couple of days for anyone? Some friends from out of town who have never been there before are going and are asking for recommendations.
Some of the offerings could just be a dish to split or taste and then move on to someplace else.
And, I know there are all kinds of new, innovative restaurants, which is great, but this is for people who have never spent a weekend in the city before. So, to really "get" New Orleans food and have it be really GOOD and not just touristy, what would you tell them?

Splitting a half muff at central grocery should certainly be on there, both for the taste and experience

Bayona is a great restaurant with an interesting menu if they are planning to visit the Quarter. And a few weeks back we had a fantastic lunch at the Meatery in Mid City which is walking distance from the Canal streetcar (and the owner just made it to finals of this season's Top Chef.)

Cochon Butcher. All the sandwiches are great but the Gambino is my favorite. Bring a cooler and take some meat home

For people who have never been, I would include Commander's in the mix whether it's lunch, dinner or brunch and I also recommend a fun jazz brunch if they will be there on Sunday morning.
Peche is a good option for casual and tasting. It serves "snacks" and "small plate" plus the raw bar.
If they want traditional Louisiana and will be there on a weekday, lunch or dinner at Bon Ton would provide that with crawfish bisque, etouffee and the like. If not there on a weekday, then Galatoire's or Arnaud's would be good options. Either of those are good options for old New Orleans fare, which I enjoy very much from time to time. The restaurants are historic and festive.
You can find good poboys at a variety of places for a casual meal. I like Mandina's which is an old neighborhood joint. Some locals aren't crazy about it, but I was there several times this year and had a great poboy and the fried oysters were delicious and plentiful. Way too many for me to eat alone. You can split a poboy and have a cup of turtle soup or oyster and artichoke soup. I don't love all of the food there, but there are plenty of good options.
August is a nice fine dining option for more eclectic Louisiana foods as well as other dishes.
Shaya is not a Louisiana food type restaurant to me, but certainly an option for variety.
The Windsor Court Grill Room has a $20 meal option I've posted about before that's a great deal for a weekday or Saturday lunch option. The hotel is lovely and the food offered is excellent. The gumbo there is delicious.
It all really depends on the type of food your folks are interested in and perhaps the type of restaurant. A mix of old New Orleans, some typical Louisiana, local joints for some casual fare and eclectic makes for an interesting food trip. So many great choices out there.

If I haven't been in a few years and haven't had access to cuisine even close to New Orleans style:
I absolutely go to Parkway for lunch, and possibly on the way out.
I get some mid-day snack oysters at Drago's
I eat a coat and slacks meal at either Clancy's or Commander's
I get a few Old Fashioneds and sip them on the porch at the Columns
Not food, but just for shits ride the streetcar from uptown to downtown and wish I could stay a few more days.
I absolutely go to Parkway for lunch, and possibly on the way out.

I enjoy agreeing with Gris. If you go to Galatoires ask for Billy downstairs and go early. If you choose Antoines, Matthew is the GM and ask for Chetta or Charles.
