Put frozen backstrap in the fridge earlier today. Before heading out tonight I pulled it out and b/c it was still frozen threw it in the sink. It was out 5 hrs and reached an internal temp of 60 degrees. Should I cook it and eat it ? FWIW I'm frying it.

Not sure if serious because you usually aren't.

I'd say you're ok if you just tossed it into the sink frozen and left it. If you were running it under water to thaw it then it probably spent a questionable amount of time outside of the danger zone, which is 40-140 degrees for under 4 hours.

How much toxin can the bacteria produce at 60 degrees or the 90 minutes or so it was above 40 degrees?

What was it contain in when it was in the sink? If it was sealed, where would the bacteria come from?

That's what I'm asking Jake. I'm gonna roll with it since Milo says it's good to go. He needs me so I know he doesn't want me to die.

I would eat it without a doubt. People leave meat out on purpose to get to room temperature before they cook it.

Bacteria grow faster at temperatures above 70*F. The fact that your meat didn't exceed 60*F would lead me to the conclusion that the meat is safer than if it warmed to above 70.
