Ice, vodka, tonic, repeat.....that’s to start. We usually do ribs. The condo we stay in only has picnic style grills, so I start them in the oven and finish them on the crappy grills. Always a crowd pleaser.

Where in Destin? We had a condo down there for about 15 years, right across from the water park. If it’s still there, there’s a good seafood market where we used to get fresh seafood and did a shrimp boil and some fish to grill for a couple of nights.

My favorite thing to cook at the beach. Local, fresh fish, some grilled vegetables... eat outside.

Tacos....the old school crunchy kind, withseasoned ground beef or Turkey. Make the filling in advance, freeze, and reheat when you need it. All you have to do is shred some lettuce, cheese, and put out the sour cream, sliced black olives, jalapeños, salsa, chopped tomatoes, etc. so that everyone can assemble their own.

Baked potatoes with a similar fix your own approach is another easy crowd pleaser. While oven baked potatoes take 45 mins or longer, they’re dead simple and require no attention whole in the oven.

I always make a big batch of salsa. Everyone likes eating it in the evenings when getting back from the beach. Usually have to make another by the third day.

The day before we leave, We go to our favorite Italian place and get a sheet pan of their shrimp and pesto lasagna. Once we get to the condo, just pop it in the oven.

We also cook ahead of time and vacuum seal everything.

Crawfish enchiladas are usually a big hit

Last year was the first time I had gone to the beach for a week with the family. We usually do a long weekend with just my wife and kids, or go for 4-5 days during a week. It was my mom and her husband, both my sisters and all their kids, and us. We decided each family would take turns making dinner. We cooked a few different casseroles and froze them a couple days before we left, and put them at the top of my cooler for the ride down. We also bought groceries and cooked one night, but it was an easy quick meal that everyone would like and all we had to do was sit it in the fridge when we got there and toss it in the oven one night. I think most of what we did was chicken. My wife made a big batch of chicken salad for sandwiches, and a huge poppyseed casserole. Just made a big pot of rice to go with it, some rolls, and green beans.

Boil shrimp the first night. You can have peel and eat shrimp, and you can peel some and make shrimp salad to have on sandwiches and crackers, use some for omelets, lots of things you can do with the shrimp.

This is an absolute must for beach trips.

Also, go to super1 and get the tropical trail mix. Mix it with smokehouse almonds and a can of salted peanuts.

Yeah, cold cuts and peanut butter sandwiches get old after a few days. I think there were 13 of us there for a few days, so the adults had chicken salad or ham/turkey while the kids had peanut butter. Also easy to make several sandwiches in the morning, put them all in a big plastic container, and sit on top of the ice in the beer cooler we took to the beach. That way when one of the kids gets to whining they're hungry, we throw them a sandwich and a Capri sun and make them sit down to eat it without someone having to go back up to the beach house or condo to get something.
