Cast iron on the stove on medium. One pat of butter in there and when it is melted, that's when the grilled cheese goes in.
Melt a little butter in the microwave and spoon it onto the bread and spread it evenly. Not completely melted butter, but enough to soften it up some. Slice or shred some cheddar, Monterey jack, or whatever else I have on hand. It should sizzle when you drop it in. Flip after a minute or so. The first one never browns all the way. I put it on a plate, and after I've cooked the rest, I toss it back in and finish it off. That way they are all hot and melty when you're eating them.

Sous vide works pretty well, then cast iron sear.

You want it hot, you use the microwave or just eat a god damn bowl of cereal. And the first dumbass that puts something metal in it can find somewhere else to live."

No but it was the 70's. My father never threw out F bombs but he would god damn you son of a bitch and dumbass you until the cows came home. Me in the back of the Lincoln with the suicide doors his Jax beer in hand and a Pall Mall dangling from his lips "god damn son, put the god damn window up...you're letting out all the smoke."
That old man loved pan sautéed shredded cheese on white bread though. He never smashed it and he used mayo.

Butter in pan first. Then grilled cheese, let it brown, smash slightly, put pat of butter on top and flip.
The wife is right.

Keep some butter at room temperature so you don't have to do this abortion of a method that doesn't get butter evenly on the surface of the bread.

It's not really that hard to put a pat of butter in the pan and tilt it around until the melted butter is the size of a slice of bread

We keep a stick of butter in a covered butter dish on the counter at all times. One of life's great pleasures in addition to a sautéed cheese sandwich is a good piece of fresh bread with soft butter on it.

Cut a sleeve of Cracker Barrel white cheddar cheese into a quarter inch slices
Butter some Nature's Own Honey Wheat bread
Throw it in the pan and grill to your desired crunch.
Don't smush it.
You people who butter the pan, not the bread, what the frick?

One time I was sick and my husband offered to make me s grilled cheese. He literally put two pieces of bread in the toaster. When they came out, he put a slice of cheese between them and put it on a plate and handed it to me.
If I would have had enough energy I would have thrown that crap at his head.

I used to butter the bread but now I butter the pan. 1. Buttering bread has a tendency to "smush" the bread a little. 2. Buttering the pan is easier. 3. The butter is more evenly spread when buttering the pan. 4 the bread toasts to a crispier finish with buttering the pan IMO.

This happened years ago and I still tell the story all the time. I'll never let him live it down.
