So my wife and I had a heated discussion tonight about how a grilled cheese sandwich is supposed to be served. I butter the pan and toast the sandwiches over medium heat to melt all cheese, gently brown the entire slice of bread, and make sure not to squish the sandwich.

My wife argues that this is all wrong. The bread should be heavily buttered, the color should be very dark/boarderline burnt, and the sand which on the whole should be flattened intentionally

What do you guys say?

I like mine golden brown. Let the cheese melt itself. it doesn't need to be flattened. Once it gets hot it will melt quickly. Impatient people flatten the sandwich, kind of like pressing all the juice out of a burger on the grill. It doesn't make any sense.

Your wife is correct.

Try it with gruyere. I like a couple of sliced pickles occasionally and when tomatoes are in a couple slices with salt and pepper.

But a basic sliced American cheese on white buttered bread toasted good and smushed almost flat is pretty standard and good.

Use mayonnaise instead of butter to brown your bread.
You'll be pleasantly surprised.

Growing up we ate "toasted cheese" sandwiches my mother made and I still make them. One slice of bread, slice of American cheese open faced under the broiler until that good old processed cheese is almost black and bubbling. Add a good slice of tomato to it as well.

Light golden brown and un-smashed, but lightly pressed. The extra pressure creates a super crispy crust. I put a light pan on top of the sandwich as it cooks to make sure the weight is evenly distributed.

I spray both the side of the bread with parkay, toast 1 side of each in the pan, take them out put 2 slices of cheese, then put it back in the pan and toast it a little more.

I love them and make them all the time as does everyone in my family.

We got our first microwave that was a huge Amana after my older brother came home stoned, put a couple in the oven, passed out and almost burned the house down. The next day the old man showed up with the microwave, held a family meeting and said, and I quote because I remember, "no more using the oven when you bunch of god damn potheads come home stoned with the god damn munchies in the middle of the night. You want it hot, you use the microwave or just eat a god damn bowl of cereal. And the first dumbass that puts something metal in it can find somewhere else to live."

That's a melt, not a grilled cheese.

Freshly shredded cheese is the only way to make a real grilled cheese.

Well I guess I'll have to tell my family not only have we been calling it wrong we haven't even been cooking it right. We'll probably just quit making them completely to avoid confusion.

Dayum Albert, you're telling me I've been making imposter grilled cheese for longer than you've been alive?

As long as it's sliced into triangles and not down the middle, who cares?

I'm guessing you cook your grilled shredded cheese on your Weber Kettle or Green Egg? Or are you really making pan fried cheese?

Your wife is correct.

And always use mayo.

And always slice diagonally.
