Almost burning the bread is terrible. Your wife is wrong on that count.

The way I make them is melt some butter in the pan over medium heat. Drop each piece of bread in the melted butter. Remove the bread from the pan immediately and coat with Kraft grated parmesan. More butter into pan, one piece of bread in. Top with whatever cheeses you're using, then top with the other piece of bread. Flip after a couple minutes. You should get a crunchy, golden parmesan crust on the outside, and gooey melted cheese on the inside.

frick mayo, frick burnt bread. That's crazy talk.

Fun fact, there's a subreddit for grilled cheeses that has all kinds of crazy recipes on it.

ETA: Also a fan of the diagonal cut with the spatula.

Heavily buttered is right, but I butter the pan. Make sure both sides are buttered and both sides are browned before adding cheese and then flattened as your wife indicates

People who don't brown and butter both sides are animals

My daughter entered a grilled cheese contest held by Wisconsin Cheese and this was her entry. Of course, it's all wrong and nobody on here would eat this...

It has carne asada, poblano peppers, a spicy red chili bbq sauce, and 2 kinds of Wisconsin cheese.
