All of this. Around 70-120 degrees is prime temperature for bacteria growth so AC isn't going to help it much. Restaurants have strict guidelines to follow on keeping food hot to serve to the public. Usually that food in a hot food case is thrown out immediately after lunch/dinner. You are not supposed to keep reheating food.

At home, you can chance it. I would rather not chance it past 2-4 hours maximum.

Okra for gumbo, tomato sauce for etouffee and jambalaya. I never mix okra and tomatoes.

Honestly, I'm not a big fan of okra. But gumbo without it just doesn't taste quite right.

I might make a bowl this weekend, and dedicate it to you. I'll post pics if I do. Chicken and sausage.
