Lol nice response

I never do eat an 8 piece, just saying I could. Also saying a 3 piece doesn't fill me up

Last time I went I got a 4 piece, side of red beans and a pint of mashed potatoes and an extra biscuit

I run a lot and it was after a 12 miler

My buddy makes it but IMO it turns out too greasy

He buys a 12 piece spicy and shreds it up the batter ends up turning to mush and grease

Not necessary IMO

Mr. MD,

What some may or may not know on this board is that some of the items at Copeland's and Popeye's are essentially identical. All who know this, please don't verbally crucify me. Red beans and rice is identical at both. Biscuits are similar at both. One makes them, and the other mixes and bakes them.

Long story short. They are probably selling Copeland's gumbo. It comes made from diversified foods, and the employees just have to heat it up. They made it a promotion item and shipped in with other ingredients.

After seeing what comes out of your kitchen, I would not waste a trip to try it. You can try it next quarter.

Hope this helps.

Well your buddy isn't making it right. How does batter and chicken make it greasy?

Tell him to lose the skin.

I don't know about Popeye's fried chicken gumbo, but Paul Prudhomme's recipe is terrific. Look it up on LaBelle Cuisine ether than on his website. It's made skinless.

Darn phone typing stinks.

Jarred Roux is Anathema, on this Board, but using Fast Food Chicken is acceptable, for a Gumbo?

I've never used fast food fried chicken for gumbo, BBG, so I don't know why you directed that to me. I don't want the chicken skin floating around in my gumbo. I suppose you could use the skinless tenderloins if you wanted to try that, but it misses the point. One of the keys to his gumbo is using oil in which the skinless chicken was fried to make the roux. Can't do that with the chicken fried elsewhere. Someone I know used Popeye's years ago to make what she thought would taste like Paul Prudhomme's fried chicken gumbo, but it didn't. It was pretty bad. Fried chicken gumbo in which the roux is made from the fried chicken oil is delicious.

And, the whole board isn't against using jarred roux. Lots of people here use it. Not as good as homemade roux, but it's not awful. People debate that flavor, too.

Directed at The Board, in General.
Consensus seems to dictate a displeasure at Roux from a Jar.

He does it to annoy people. It's his schtick. A bad one. I usually skip his posts, but he directed that one to me, for some reason. Didn't make sense since as I said nothing about using fast food chicken in gumbo.
