Any low-numbers, specialty production vehicle will retain value and appreciate over time.
Ferrari, Porsche, some Corvettes, a few Cadillacs, etc.
Ford GTs are already out of sight.

I saw that Toyota is bringing it's best ever off road vehicle back into production for one year only and not in the US.
It is also from the last 30 years.

Old Z cars were awesome. My junior year of high school I had a 280ZX Turbo, then senior year I traded it in for a 300 ZX Turbo. The 300 was one of the first with the digital dash, and it also talked to you. Probably my favorite car til my 911. I'd love to have that 300 today. I also wish I had kept my 2010 Transformers Edition Camaro, but my wife didn't want me to pass it on to my kid as his first car since it had 426 hp so I traded it in on the Porsche. It was the first year for the new Camaros, and they only made something like 546 of the manual Transformer Editions. I think that could be worth something 20 or 30 years from now.

Many people have said the 300zx, but failed to mention the original 1984 300zx Turbo, 50th Anniversary Edition, made 30 years ago. Only 2000 were made. My brother had one and this thing was some far ahead of its time with all kind cool arse gadgets, including a G-force gauge in the dash.

yes, of course but the faulty design of the timing belt in relation to the waterpump caused the heads to fail at a greater than normal rate for these cars. It's a Mitsubishi design flaw, it's in other vehicles too.

The issue with the old Zs is that they have a very high susceptibility to rust. That's why, despite being very fun to drive and iconic, you hardly ever see them anymore. I guess this would make existing examples even more valuable, because around the time they become collectable the only ones left will be undriven museum pieces.
