Polenta, in keeping with the theme. Skip the pasta.

Steamed broccoli with garlic is perfect.. Next time if you're feeling adventurous, try broccoli rabe. Make your taste buds zing.

Grilled zucchini, good idea. Toss with fresh rosemary and a drop of olive oil.

And some Pepcid.

The only side I ever do with pasta is salad. With oil or vinegerrette, not cream based dressing.

caprese salad

Caprese salad is very overdone. It's so overdone, many Italian restaurants are not offering it on the menu.
The trendy alternative is an arugula salad with grape tomatoes, black olives and burrata cheese. The burrata melts easily when tossed and makes a coating similar to buttermilk dressing. Very tasty.

Plus squash, onion, and broccoli. This is my husbands favorite meal. With spicy Italian sausage of course.

The right up is interesting. They don't all agree on arancini. I like it when done well, but I don't get excited over risotto like many do.

I don't see that many Italian restaurants are removing caprese from the menus. I saw that one guy was. Where did you read and many are removing it?

I don't find Caprese boring at all. The flavors work smoothly together for my taste. I enjoy barrata, capers and arugula, but given the choice, I'll pick Caprese nearly every time. I sprinkle it with some capers once in a while because I love capers. I don't love black olives, though.
