Mine are usually in ziploc and water on ice for a day or so. I change the water and sometimes add a little salt to the mix. Not sure if it helps or not. We mostly kill teal so haven't had any complaints

An overnight soak in saltwater can be a good thing, but I don't always do it.

Always soak them with water and a little vinegar for a day. Change water out then freeze or eat

My experience is that duck cooked hot and fast (med rare at most) is just like venison prepared same way. It doesnt have that taste that some object to. When cooked low and slow they do develop that taste. I like both ways some dont. Try grilled w/ and w/o bacon etc or seasoned and seared then finished in a hot oven for a few minutes to just med rare. It really surprises the "I dont like duck" crowd.

Soak in water, keep changing out water until it clean.

Also a little secret so your ducks don't taste "gamey". Honey.

This, or I debone and stuff with cornbread stuffing with a cranberry reduction either on the side for dipping or drizzled on top.

This. I started filleting the breast into medallions and grilling them quickly on a hot fire leaving them medium rare. Everyone loves them. I use only salt and pepper. They are quite tender cooked like that. The more done the tougher.

there used to be this stuff called fajitabath that had lime juice and pineapple juice and jalapenos and such, but it is off hte market as far as i can tell.

if your ducks have a lond slender jagged beak, dont eat them.

I don't have much experience with ducks, but a few spoonfuls of baking soda in water takes the muddy taste out of catfish.

THIS! Don't over cook them. Med/Med-Rare and you should be good to go. I've found that overcooking ducks brings out the gaminess.

My neighbor always smokes them (partially 'till they are still rare) before freezing. Then he siomply takes them out the freezer to add them to whatever gumbo/sauce/gravy he is making. Excellent way to use them.
