If I am doing the bacon wrapped duck ka-bobs, I use Dale's seasoning to marinate the breasts for about an hour.

Kid's and wife will fight over them cooked this way.

Is awesome. But for the city folk, i soak for 24 hrs in salt water or milk. Then marinate for 12 hrs in a mixture of pepper jelly, philadelphia cream cheese, diced jalapeno, Tonys (seasoning salt), peach mayhaw jelly. Drape bacon in the top and bottom of a grill basket and pour the duck medallions into the basket. Close and smoke on grill for 45 min
