Earls is where we always go for happy hr and food. kind of an upscale bar with hot arse waitresses dressed in tight black outfits

1. Vine Street Pub (as Kevin mentioned). Great beer, great food. They are hippies though so you have to pay with cash. If they have Hop Vivant on tap when he will be in it's a must try, it rivals all the top DIPAs easily, but it is brewed randomly.
2. Freshcraft mt favorite beer bar/restaurant in town. They always have great tap lists with beers that aren't available anywhere else. LINK
3. Falling Rock Tap House easily the most famous beer bar in town, they have the most non-BMC taps in town by far. If Pliny is in town they will have it on tap. They also bring out random awesome kegs all the time. Food is mediocre.
4. Rackhouse Pub Great food with 20-40 taps of Colorado beer. LINK /
5. Cheeky Monk If he's into Belgians this is a must stop. Food is ok, unrivaled belgian selection.
Fort Collins
1. The Mayor of old Town Maybe the greatest beer bar I've ever been to. Unreal taplist. LINK
2. Choice City Butcher & Wine Good food with a good taplist.
That's probably the "best of" list of pubs and bars.
As for local beers not available outside of the immediate area that can be found without too much trouble at the liquor stores. I'd recommend anything from Dry Dock, particularly their Double IPA. Crooked Stave is extremely limited but make tremendous sours and bretts. Funkwerks won the GABF gold ans specialize in saisons and all are very good.Elevation and River North are both bottling now and are solid though both lean a little more Belgian. The Quad from Elevation is great, and any of the barrel aged brews from River North are good. Both are a little pricey. Renegade Ryteous Rye is a really good Rye IPA. Dad & Dudes Dank IPA is solid, though it is a bitter hop bomb.

I could make recommendations from that list, too. There are a ton of awesome beers in there.

The Argonaut in Denver has a great beer selection they also have bottle shipping containers on hand. The containers were kind of pricey, but all the beer arrived unharmed so it was worth it.
If I'm bringing beer back in checked luggage I'll just put each bottle in a zip lock bag, wrap it in a tshirt and put them in the middle of the suitcase.
If I'm shipping it back I'll typically ship from a FedEx Kinkos location. The employees there typically don't give a crap and will ship anything without question. If they do ask I typically just tell them it's vinegar or kitchen supplies. When I was in Denver in October it cost $27 to ship back a 12 pack of bombers to Louisiana.

Equinox Brewery is cool to visit. Tons of places to eat in old town and pretty much all have unique beer to try.
Odell is just out of town as well.
There was a pretty good place called Vincent's I believe. Spent most of the trip smashed because of the brewery hopping.
If you have time the brewery in my avi is two towns to he south of Ft Collins, in Loveland. Look up Grimm Brothers Brewhouse. Usually have a food truck or some sort each night at the taproom.
ETA: Dominic's is the name of the restaurant. Also hit Snooze in old town or breakfast. Awesome food and brew-mosa's

Hit up some of the Mexican restaurants and get some Colorado green chili smothered on your meal.
Quick lunch idea? Go hit up Cheeba Hut in Ft. Collins, decent sandwhiches for a decent price.
If you have time to swing through Boulder, do some of the brew tours there. Boulder Beer is a must IMO

Definitely if you have time. Denver beer co. Is a great hang out spot when the weather is nice. Looks like you may have icicles on your nads though. There is a Gourmet Hotdog place near Great Divide called Biker Jim's that is fantastic.
ETA. You may be able to find Crow Peak Pile o Dirt Porter in Denver or Ft Collins.

Don't bother with Denver Beer Co, the patio is awesome but the beer is mediocre at best. Go to Prost instead. I live here and I always go to River North, Great Divide, Falling Rock, Fresh Craft, and Euclid Hall( get the sausage plate). The food here sucks but you have to eat so go to Lucky Pie, Biker Jim's, Masterpiece Deli, and Hops &Pie. All but Masterpiece have great beer.

Not beer, but Luscious Nectar in Old Town is an awesome place to stop. They have probably 50 infused liquors. Truly infused, for instance tobacco infused scotch and a bunch of infused vodkas. Whatever it is infused with is still in the big arse glass jars they get the shots out of.
Stuft burgers was pretty decent. Can get buffalo burgers with virtually any toppings.
Cafe Vino is near campus. Pretty good beer selection and the food was memorable.
We stayed at The Armstrong Hotel and there was a laid back bar and a chocolate restaurant in the building. Also a independent coffee shop that I wish could get duplicated near my house.
In case you missed the suggestion for Snooze, I'll repeat it again. Awesome breakfast.

Here is the Ft Collins "Spec like" store I went to Wilbur's
Denver store I went to....small but good selection and friendly staff. It's in the LoDo area near Coors Field which is where Falling Rock and Yeti are located. Mr B's
