This looks like New Orleans red beans to me.

Adding cumin and jalapenos sounds like a Nachitoches touch since it brings in the Mexican influence.

Like I've said several times already in this thread Natchitoches style red beans are a more spicy robust bean served in a more "slop" style than the more beany New Oleans style. New Orleans has a bit more refined taste to it but Natchitoches is more wholesome. You want to see the distinct difference eat Emerill's (New Orleans) and then make the 4 hour trip for lunch and have Lasyone's (Natchitoches). Those are two commercial enterprises with vastly different beans. You want to really know the difference eat at a locals house and in NOLA they will serve you soupy red beans with a small portion mashed. On the other hand in Natchitoches they will serve you a much more hardy, thicker, slop.

Where do the Popeye's beans come from? Is that a Nachitoches recipe that was stolen and transplanted to Greater NOLA for mass production?

So let me get this straight, in NOLA they serve basically a red bean soup with a side of mashed red beans without 7 oz of tobasco? This thread gets better and better. Guess I need to do a road trip to NOLA for a side of mashed red beans and soup.

Surely, you can think of a better description than one which resembles what pigs are fed.

I know someone from Natchitoches. Born and bred. He has never heard the description of "slop" used nor has he heard of "Natchitoches style" nor a bottle of Tabasco per pound of beans. He doesn't put cumin in his either.

I put jalapenos in purple hulls and black eyed peas. Haven't put it in red beans, mainly because I use a spicy sausage in those, but I'm not opposed to it. I would use hot sauce to season, but I keep that on the table with the peppered vinegar for individual use.
