Depending on what boudin we’re talking about. A couple of these places around Louisiana make great food, boudin, not so much. Richard’s boudin taste better than a couple of the “places” that specialize in boudin.

I've had burritos that did not include rice, that's just an optional filler. Never had boudin that did not include rice.

Rice is in some chipotle or Taco Bell burritos and the like and a fairly new phenomenon.

Burritos are considered gringo food in most of mexico. The only area they are traditional to, and only since the late 1800s, is northern mexico. They don't go back nearly as far as tacos or enchiladas. But you are correct that rice was not an original ingredient in burritos.
