Move them to the far side away from a burner. Dry rub em with something sweet and spicy. Throw the chip box over the hot side.
Spritz em with apple juice occasionally from a squirt bottle.
235 degrees until they hit 197 degrees. Pull from the heat and rest....

Thanks for the wing recommendation the other night of pluckers. Boys ate 2 50 wing platters of sweet bbq mixed with buffalo hot....
