Headed to vail in early October. What would you do while there? Ski I guess if there is snow by then but what else?

The resorts won't be open in October. Only back-country skiing...
Lots of hiking, but you could be restricted to lower elevations due to cold/snow. See the Maroon Bells near Aspen. Drive around central and SW CO. There's a train that takes you from Durango to Silverton...I guess it'll still be open. Fly fish.

IMO there is no reason to go to Vail if you can't ski......or mountainbike. The town itself has all the charm of a 1970s shopping mall. You could drive to Minturn and eat at the Minturn Saloon and then drive Leadville. If Independence Pass is open you could drive from Leadville down into Aspen. Then there are the hot springs in Glennwood Springs.

Which have such a strong sulphuric smell that I couldn't even enjoy them.

I agree with this. October and May have to be the worst months to visit Colorado. Not enough snow to ski and too much to hike or travel high passes comfortably.

Breckenridge is a short drive and a much better town to visit...

Hike and see the color change is about it in early October. You may need to go a little further south for peak colors though. Kebler Pass and other areas around Crested Butte/Almont/Gunnison are usually peak the last week of Sept or first week of Oct. Same with the Collegiate Peaks in Chaffee County (St Elmo). There won't really be any snow on the ground you might actually still have nice weather. The high peaks always start to get dustings in early Oct, but the first couple of times it's usually melted away in a day or two. It's season change, so you could have warm sunny mild days, or cold snowy days and some flurries in town, you never know.

A lot of restaurants and shops won't be open or will keep odd hours.

As someone else said, if possible, go to Aspen. MUCH better town. Vail will be pretty lame in early October.

Take i-70 back down the hill and turn north and go into Boulder and hang out on the Pearl Street Mall at the shops, bars and restaurants. Maybe buy some hootch and sit in a drum circle on the Courthouse green with all the smelly hippies and regale people with stories from the swamp.

Vail is a small place. It's great skiing though.
