a couple easy ones come to mind:
From Dazed and Confused
From Fatal Attraction
From The Empire Strikes Back
From Dazed and Confused

"That's what I love about these high school girls, man. I get older, they stay the same age."
From Fatal Attraction
quote:
"Bring the dog, I love animals. I'm a great cook."
From The Empire Strikes Back

"Oh captain, my captain."
Specifically from the ending of Dead Poet's Society. To me that's one of the most powerful moments in cinema of all time.

This is a tough one.
"Man's got to know his limitations" is way up there.
"Cinderella story. Outta nowhere. A former greenskeeper, now, about to become the Masters champion. It looks like a mirac...It's in the hole! It's in the hole! It's in the hole!" - is right there, too.
"I've… seen things you people wouldn't believe… Attack ships on fire off the shoulder of Orion. I watched c-beams glitter in the dark near the Tannhäuser Gate. All those… moments… will be lost in time, like [*small cough*] tears… in… rain. Time… to die…" - is probably it though - adlibbed without advance approval of the director - and from my favorite film, Blade Runner.

Phil: What would you do if you were stuck in one place and every day was exactly the same, and nothing that you did mattered?
Ralph: That about sums it up for me.

One is too hard, so I'll list a few.
quote:
"What's the most you ever lost on a coin toss."
quote:
"Thanks for the adventure-- now go have a new one! Love, Ellie"
quote:
"I. Drink. Your. Milkshake."
quote:
"Why don't we just wait here for a little while, see what happens."

quote:I can't even do it justice, frank oz's delivery is just so incredible.
Size matters not. Look at me. Judge me by my size, do you? Hmm? Hmm. And well you should not. For my ally is the Force, and a powerful ally it is. Life creates it, makes it grow. Its energy surrounds us and binds us. Luminous beings are we, not this crude matter. You must feel the Force around you; here, between you, me, the tree, the rock, everywhere, yes. Even between the land and the ship

Hard to pick favorites.
Here's some classics:
"Leave him alone Ms Elsa. You're no good for him."
"Jones? Jones! Your persistence surprises even me. You're going to give mercenaries a bad name."
"There is no normal life Wyatt. There's just life. Now get on with it."
"Deserves got nothing to do with it."
"Stand up Miss Jean-Louise. Your father's passing."

If I had to pick a non empire quote, it would probably be fredo's "I'm smart!" monologue in godfather part 2, you know those two movies just take the most basic exposition and make it so memorable
