Were trying to open yesterday...fresh and fried oyster bar? Yes please.

True to its name, Boil & Roux will sell boiled shrimp, crawfish, turkey necks and snow crab legs, along with the trimmings, such as potatoes, corn and mushrooms. The restaurant will also carry what Walker called “Southern comfort food” — etouffee, gumbo, red beans, fried chicken and barbecue shrimp. Boil & Roux will have an oyster bar with fresh and fried oysters, along with a full bar

If they can execute all of these things on a high level, including service, they will have a shot at sticking around. Based on my personal taste, I truly hope they will succeed. But I have little faith in that happening. I will be able to tell for sure after one visit, but it feels like a fail. I seriously doubt it will be as good as we are hoping.

Early prediction: They will start to slowly die two months after crawfish season. This is especially true if they're going to be just a glorified crawfish boil joint.

Yes, it's open. Amazing appetizers, the food is the best in town.

Now open: Boil & Roux

Business hours are Monday-Thursday 11 a.m.-10 p.m., Friday-Saturday 11 a.m.-midnight and Sunday 10 a.m.-10 p.m.
